RAW PEANUT BUTTER BROWNIES

What you'll need:
For the bottom layer:
1 1/2 cups of almond meal (I dehydrate the pulp left over from homemade almond milk)
1 1/2 cups of pitted dates that have been soaked for at least 20 minutes
1 1/2 tablespoons of cacao or cocoa powder
A generous pinch of salt
For the middle layer:
1/3 cup of peanut or almond butter
1 tablespoon of water
For the top layer:
3 tablespoons of coconut oil or ghee
1 tablespoon of liquid sweetener (maple syrup, brown rice syrup or honey)
1 tablespoon of cacao or cocoa powder
To assemble:
In a blender or food processor grind the almond meal, then slowly add the soaked dates (discard the water they were soaking in), one at a time. If your blender is not so powerful, like mine, chop the dates first. Next, add the cacao powder and salt. Once properly combined, press the mixture into a 2 quart, or 9 X 11, baking dish. Place in the freezer to set for about 30 minutes. Once the bottom layer is hard, mix the peanut butter and water to form a spreadable paste. Spread this peanut butter layer onto the bottom later. Finally, combine the coconut oil, liquid sweetener and cacao powder until it looks like a chocolate glaze. You can pour this glaze over the bars, making sure it is even, and transfer to the freezer for a few hours to set again. After the bars are hard, you can cut into squares and store in the fridge if you plan to eat in the next few days. Alternatively, the bars can be kept in the freezer for about a week.
